A light, easy, cheap summer meal. The best part about this lunch or dinner- it can be a light snack, or you can make it a full meal. The most expensive, but main, ingredients is the avocado.
Ingredients:
8 corn/flour tortillas
1/2 onion
2 or 3 tomatoes
3 avocados
1 Lemon
Lemon Pepper
Chili Flakes
Cilantro
Salt
Dice onions, tomatoes, and cilantro. Put the onions in the skillet on medium heat with a tsp of olive oil. Add lemon pepper, chili flakes, and salt to flavor as desired. Cook onions until a little soft, but still has a crunch. Turn stove to a low heat and add the tomatoes. You just want to warm them, but do not let them get to the point of mushiness. While tomatoes are warming, cube avocados and heat up tortillas in a separate skillet. Build taco. Add cilantro and spritz with lemon. Enjoy!
Those sound yummy. I love avocados- a great, natural, healthy fat. Vegetarian food doesn't have to be bland!! I will have to try those.
