Goodbye Summer, Hello Fall.

  RIP wonderful summer. It has been filled with adventures, sunburns, good food, and fun times with amazing friends.  To send this summer off right I went to Eva's, one of my favorite restraunts and is located on  317 South Main Street, to enjoy a fresh watermelon salad.  This is a $7.00 light dinner/snack and worth every penny.  Eating out is very enjoyable, however it is easy (and cheap) to make at home if you are feeling the need to stay in.  I tweaked this recipe a little from what is served at Eva's.  
   
      Ingredients:

         -Watermelon
         -Basil
         -Feta
         -Cherry Tomatoes
         -Balsamic Vinegar
         -Cracked Pepper

Cut up watermelon into bit size squares and put in bowl.  Add basil, feta, and cherry tomatoes.  Pour desired amount of balsamic vinegar on top.  Garnish with pepper.

  1. Summer is a great season! There are many wonderful sensory treats that only come with the warmer months. Fresh basil and watermelon being two of them. Wow, what a odd combination! I have never tried them together. I have only been to Eva's once, loved it, and want to go back. I do like the tapas/small plates they serve.
